SPRINGinSTEPSPRING IN STEP PREDICTS LONGEVITY: Is a quicker walking pace healthier? Researchers surveyed 9 studies of 34,000 people with average age of 74, tracking for up to 22 years. Overall, faster walkers lived longer than slower walkers and were more than twice as likely to be alive after 10 years than those who were slower.  The walking speed had no association with gender, ethnicity or health condition.

commentary: In Chinese medicine, it is very important to keep the legs and feet strong. From a western standpoint, those people who can move well, will keep better cardiovascular fitness, lymphatic drainage, toxic clearance, better blood sugar balance, lower blood pressure, and have a better mood. reference: IAGG World Congress of Gerontology and Geriatrics, July 2009

HERB of the SEASON

mistletoeMiseltoe (Viscum Album)

People like to kiss under it, but does it have any other use besides romance? In European folklore, it is considered to promote life and fertility, give protection against poison, and was considered an aphrodisiac.

Used initially to stop postpartum bleeding,  contemporary medicinal use revolves around it properties for cancer and blood pressure(1). In cancer care, miseltoe seems to be able to enhance macrophage and immune natural killer cell activity(2). An analysis of 19 studies have found it useful to improve quality life in a numer of patients with cancer(3).

Animal studies in cancer have shown some promising results, although some human studies in patients with lymphoma showed no difference from those not using this herb(4).

Miseltoe does have a toxicity, although review study of ingestions concluded that eating one to three berries to be of no toxicity (5).  Nevertheless, is best not used when other more effective treatments are available, and should only be used under supervision.

Warm Chestnut Pockets

chestnutfrom: www.NourishThis.com

Ingredients:

12 Raw chestnuts
1 cup baby spinach, chopped
1 cup creamy goat cheese
1 tsp. sea salt
12 pieces  rice paper
4 cups water
Oilve oil

How To:
Pre-Heat oven to 350 degrees. In a small sauce pan, bring 4 cups of water to a boil.  Slice an "x" in the top of your raw chestnuts and submerge them in the boiling water.  Allow them to cook 5 minutes.  Remove chestnuts from the water with a slotted spoon and peel immediately (if you wait, the shells will harden and make removing them difficult).  Chop chestnuts finely and set aside.  Wash fresh baby spinach and thoroughly dry and chop.
Place raw rice paper on a small plate and brush each individually using the hot water from boiling the chestnuts.  This will soften the rice paper and allow it to be rolled without cracking.  The rice paper will get sticky, but work with it gently and it will not tear.

To Assemble, spoon about 1 TBS of raw spinach, 1 TBS of goat cheese and a portion of the chestnuts into the center of the rice paper.  (I try to place it in a line in the center, to make the wraps like little fingers).  Roll the edges of the wrap up and then roll the wrap over on its side until it is fully covered.  Coat with a spray of Olive oil and sea salt and bake for about 10 minutes.  Makes 12.

Health Commentary: Warming to the body, chestnuts have been used in Asian medicine to nourish the digestion and calm the bowels. Chestnuts are unique among the nut family as it is lowest in fat content, and contains vitamin C.
